Pascal Marcin already has a fine track record to his name. Coming from a family of independent restaurateurs, he received, from his earliest childhood, a broad gustative and culinary education, developing his palate to the best possible effect. After qualifying, he worked in particular in the Alban Chambon in Brussels and in the Vivier d’Oie in Dorine, having a Michelin star. Following this, it was at the Sea Grill, alongside Yves Mattagne, that he sharpened his technique and savoir-faire over a period of four years before joining Nico Ladenis’ team in London in his Michelin three-star restaurant.
Always looking for novelty, he also spent four months with Alain Ducasse in Monaco.
In 1986 he travelled to the Olympic Games in Atlanta to there cook tasty dishes for Belgians present there. Following a further range of enriching experience, Pascal Marcin worked as Executive Chef at the Cercle de Lorraine, in Brussels and in the Cercle de Wallonie in Namur, before being appointed at the Dulce La Hulpe, Brussels.
His passion for gastronomy and his live curiosity have always pushed him to look for new flavours and textures.
